Rabbit fried and slow-cooked in a dark earthy Carob Syrup with Caramelized Onions, Fennel Seed and Bay Leaf with added White Wine, Fresh Herbs and Garlic

Local prime cut of pork or beef flank stuffed with ground meat flavored with local herbs and with local sweet carrots and spring onions rapped in bay leaf and slow baked and served after resting in a home made stock
